Linux as OS for a car-like new vehicle, that can accept ‘app installs’ to enable new use-cases

I’m a product engineer, but a noob to Linux. My startup has developed a new type of micromobility vehicle. It has all-digital ‘by wire’ control and response, I’d like to enable the vehicle to change its characteristics (and things it could be used for), by loading apps (behaviour, navigation, soundscape, making it musical instrument or a gaming controller). Could the Snap ecosystem be the best solution as an OS on this new vehicle?
