Not sure about Flatpak but the Snap distribution do have a certain level of quality assurance, and will avoid causing user regressions just to be a couple of days earlier than others.

Free software is free of choices, you can:
- Switch to the candidate channel for the latest release of LibreOffice
- Use Flatpak, AppImage, PPA, or even build from source for the latest bleeding edge bits, but do note that just like Snaps, any of these distributions may have bugs.
- Donate to LibreOffice so that they can hire more gurus to publish the LibreOffice snap directly.
