There seems to be a pre-existing bug report regarding this issue with subiquity regarding shlex on Launchpad: Bug #2069994 “Jun 21 14:06:35 ubuntu subiquity_log.7400[13454]: ...” : Bugs : subiquity
Could you please share your installer logs and partitioning scheme on that issue thread in Launchpad?
