If you are experiencing this with firefox then you’re probably affected by the combination of these two issues. A fix for the second issue is expected to be released with snapd v2.61.
Changelog for snap 2.59 says that pending updates will be applied once "all apps are closed".
I assume this means "all processes associated with an app that has a pending update".

But it relies on old and almost unused warnings code which may be buggy.
Also users will be required to execute snap warnings to see what is wrong.
